    SUMMARY

    Oversee all aspects of service operations in the Foundry Grill. Lead a professional service team in providing exceptional service to our guests. Oversee and lead service team in daily training, monitoring and improving current standard operating procedures.

    Execute the vision of the Foundry Grill through measureable concentration in Leadership

    Managerial Presence, Service Standard training, team execution, environmental initiatives and achieving expected profitability expectations.

    ESSENTIAL DUTIES/RESPONSIBILITIES

    1. Leadership

      1. Guide the overall vision and business plan for the Foundry Grill.

      2. Work with the marketing team in collateral to enhance sales on property and the local community.

      3. Possess exceptional understanding of fine dining service standards.

      4. Exhibit exceptional job and product knowledge to provide staff and guests with accurate information in all aspects of food, wine, service, and resort information.

      5. Personally greet and/or seat 80% of Foundry Grill guests on a daily basis. Supervisor's floor presence will be expected during peak times to achieve specified percentages.

      6. Take ownership and responsibility for all aspects of Restaurant operations and service standards. In addition, provide insights to increasing efficiencies and maintaining service standards in the Foundry Grill.

      7. Evaluate team members based on performance of service standards, sequence of service, and timing. Calibrate all team members to consistently perform standards in the Foundry Grill and score above 90% on monthly unifocus and maintain Forbes standard.

      8. Monitor food and beverage quality to ensure Sundance standards are met.

      9. Ensure recycling program is executed for glass.

        1. Service Standards

          1. Review current training procedures: review, update and/or create comprehensive training program for all Foundry Grill employees.

          2. Oversee daily training in the Foundry Grill.

          3. Administer training for all Foundry Grill employees to ensure proper sequence of service and Forbes standards for all guests.

          4. Ensure that dining spaces are clean, organized and in proper working order at all times. Ensure completion and effectiveness of side work and cleaning schedules.

          5. Evaluate current standards, procedures and job descriptions; update and/or create standards and procedures elevating levels of service and performance within the department.

          6. Create schedules and hire staff for the Foundry Grill. Ensure that the Restaurants are properly staffed, that shifts are properly covered according to business demands, and that the staff is properly trained.

          7. Oversee and ensure the set-up, confirmation, and organization of restaurant reservations - assist in creating databases and customer profiles

          8. Ensure Restaurant timing of seating and flow to ensure that fine dining standards are met.

          9. Review staff performance according to Sundance Standards.

          10. Oversee compliance with UDABC and State Laws. Provide direction and training to ensure that staff, facilities and record keeping are compliant with state laws and regulations as prescribed by the UDABC/County/State laws, rules and regulations.

          11. Ensure compliance with health department standards to achieve an "A" grade on all inspections.

            • Profitability

              1. Create and administer the Foundry Grill budget with direction from the Director of Food and Beverage.

              2. Provide clear understanding of day to day actuals needed to achieve budget.

              3. Control costs, regulate sales and labor, and maintain profitability standards.

              4. Conduct monthly inventory of supplies. Order supplies. Ensure restaurant supplies are stocked at adequate levels for service.

              5. Work closely with Culinary Leadership and F&B Director on menus, food concepts, wine lists and guest feedback

              6. Coordinate large party and special events with set menus for the Foundry Grill. Collaborate with Sales & Conference Service for any BEO events.

              7. Develop and execute business development plan.

              SUPERVISORY RESPONSIBILITIES

              Manage Foundry Grill staff (30 employees).

              Carry out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

              Complete all applicable paperwork for the above responsibilities and submit to HR in a timely manner.

              ENVIRONMENTAL COMMITMENT

              Support and participate in environmental programs associated with position, for example: minimize waste, recycle, conserve energy, purchase and use sustainable products, educate co-workers/guests on environmental ethic, support vendors with similar environmental ethic, decrease pollution levels, minimize the use of toxic chemicals, restore wild life habitats.               DRESS CODE

              Operational managers are required to wear nametags at all times while on duty.

              Clothing must be unwrinkled and clean, and in good condition (no rips, tears, or frays regardless of whether accidental or fashionably placed).

              Blue jeans are permitted.

              Men's shirts must be tucked in with the exception of men's dress shirts which have a straight, finished hem (no tails).

              Appropriate skirt length is from mid-thigh to ankle.

              A tailored fit is required of all clothing.

              Button down shirt or polo or blouse required.

              Tank tops, halter tops tube tops, and spaghetti straps are prohibited.

              Sleeveless shirts are permitted for females. Straps must be 3 fingers wide.

              Bare midriffs are prohibited.

              Proper footwear for your department is required.

              Dress sandals are not permitted.

              Flip flops are prohibited in all areas.

              Tennis shoes are prohibited.

              Fashion sneakers are allowed within the following parameters: earth tone colors, no rubber on the upper, sleek design, minimal contrast between sole and upper colors (ie. no black shoes with white soles).

              T-shirts are prohibited.

              No hats.

              Failure to comply with the dress code policy or enforce dress code & personal appearance policies with their staff, may result in disciplinary action up to and including termination.

              EDUCATION and/or EXPERIENCE

              Bachelor's degree (B.A.) from four year college or university; or one to two years related experience and/or training; or equivalent combination of education and experience. Two to four years food service management experience in a full service restaurant. Expert knowledge of wine, liquors and beer. Prior experience with basic accounting and budgeting.

              TECHNICAL/COMPUTER SKILLS

              Must possess a working knowledge of word processing, spreadsheets, internet navigation, electronic mail, and point of sale systems.

              CERTIFICATIONS, LICENSES, REGISTRATIONS

              Must possess or obtain a valid food handlers permit within 30 days of employment.

              Must possess or obtain a valid alcohol service permit within 30 days of employment.

              Must possess a valid U.S. Drivers' License in good standing as determined by Sundance's Insurance Company guidelines.

              LANGUAGE SKILLS

              Ability to read and interpret documents such as safety rules, operating and maintenance instructions and procedure manuals. Ability to write routine reports and correspondence. Ability to speak effectively before groups of customers or employees of organization.
