About this role

The Cook NBH is responsible for the preparation and service of breakfast, lunch and dinner meals for patients and facility staff according to the approved menu cycle. This position follows all policies and procedures, menus, recipes, and guidelines to provide accurate quality and quantities of food. The Cook follows standards and policies of the dietary department in areas of infection control, sanitation, and safety standards as well as professionalism in demeanor, attitude and service to patients and staff. When assigned to the late shift, may assume general supervision of the department though the dinner meal. In occasional absences of manager or supervisor, may be responsible for department oversight.

What you bring to the table

Education

• High school diploma or equivalent required.

Experience

• One (1) year cooking in the food service industry experience required.

• Experience in commercial, military, or other institutional setting preferred.

Licenses/Certifications

• Must be certified through ServSafe Food Safety Sanitation Course or must obtain certification within 30 days of employment.

What you will do

KEY JOB RESPONSIBILITIES:

• Prepares and cooks food indicated on menus provided for patient and personnel, using standardized recipes based on standard portion size.

• Schedules food preparation so that items such as vegetables and grilled foods are prepared in small batches continuously throughout the serving period as evidenced by shortages.

• Estimates food requirements and controls serving portions, eliminating waste and leftovers.

• Cleans kitchen equipment.

• Follows dietary and hospital safety procedures to prevent accidents and injuries.

• Follows weekly cleaning schedule for all equipment.

• Checks equipment and cooking area often to make sure they maintain safety and sanitation requirements on a daily basis.

• Reports repair and maintenance needs immediately to the Food and Nutrition Services Manager or Supervisor.

• Ensures food is served at the proper temperatures, prevents cross-contamination of foods, and ensures a safe environment for the patients and staff.

• Follows proper sanitation practices such as daily cleaning and proper storage.

• Ensures that temperature sheets are completed daily, and empty boxes and trash are removed throughout shift.

• Follows the clean-as-you-go practice and is evident when kitchen is inspected.Stocks and rotates supplies.

• Ensures storeroom and cooler are stocked in a timely manner.

• Ensures that items needed to meet the daily menu requirements are available in the kitchen.

• Completes production records and temperatures for foods:

• Ensures that production records are filled out for each meal and all food is accounted for each shift.

• Ensures all special dietary needs are met according to the menu.

• Ensures temperatures are logged for each food item before leaving the main kitchen and proper temperature are met.

• Complies with local Health Department standards on personal hygiene (grooming) and adheres to the infection control policy regarding illnesses.

• Is sensitive to cultural diversity issues, treats patients as individuals, and considers the culture of the patients when providing care and treatment.

• Is knowledgeable about care and treatment needs of patients of different ages.

• Provides individualized care and treatment that is consistent with/sensitive to the age and life span developmental needs of each patient.
