Sous Chef

Job Description: Under the direct direction of Ex. Chef and Sous Chef and general supervision of Director of Dining, within established company a departmental policies and procedures, the Cook performs the following pares the proper amounts of food according to production sheets such as salads, desserts and vegetables in accordance with production sheets, standard recipes, and portion control and time schedules. Assists in the serving of meals in both the Main Kitchen and Satellite Kitchens. Helps in the Dish Room when necessary. Maintains high standards of sanitation and completes daily and special cleaning tasks as outlined on the sanitation checklist. Meets daily with Ex. Chef and Sous Chef to go over daily menus and special functions to insure proper portion control and any special diet needs. May need to order and receive food. Does general baking when needed. Attends in service training sessions and mandatory meetings. Assists Ex. Chef and Sous Chef with the organizing of walk-ins, refrigerators, walk-in freezer and storerooms. Performs similar or related duties as required or directed. Job Requirements: Education: Must have a high school diploma or ining and Experience: Minimum one year as a cook in a hotel, restaurant, country club, hospital, school or nursing Knowledge: Ability to read and write, follow diet instructions and menus, compute quantities of food needed and follow oral and written directions. Must know basic methods of preparing food, especially meats and vegetables and be familiar with seasoning requirements. Must have general knowledge of routine special diets or where to find needed information. Must know how to operate kitchen equipment and recognize the need for equipment repair, as well as use utensils to the greatest advantage. Management Position? No Entry-Level Position?
