Restaurant Kitchen ManagerAbout the Job
Our client Restaurant is currently seeking a Culinary Manager or Kitchen Manager for a busy restaurant kitchen.
The Kitchen Manager is responsible for managing all aspects of the kitchen and kitchen personnel. He/She ensures the quality preparation of all menu items and proper handling and storage of all food items in accordance with standards. The Kitchen Manager coordinates the purchase of all food, maintains approved food costs and labor costs, and maintains the standards of the restaurant.
Essential duties and responsibilities:
* Maintain equipment and comply with all departmental policies, service procedures, standards.
* Check the house counts, forecasted covers, catering activity, purchases, and meetings.
* Establish the priorities and assign production and prep task to staff to execute.
* Monitor and maintain cleanliness, sanitation, and organization of the Kitchen.
* Monitor ingredients in order to forecast shortage. Work with vendors on price negations as well as to order what items/ingredients are needed for the kitchen.
* Train staff on machinery, sanitation and health regulations.
Qualifications:
* 2 years experience in a Kitchen Manager (Not a Chef) position.
* No more then 3 jobs in the past 6 years.
* Food handling certificate.
* College degree preferred.
* Knowledge of food cost controls.
* Previous experience with all products and food ingredients.
* Fluency in English.
* Fluency in a second language is ideal but not required.
* Skills in basic arithmetic.
* Strong communications skills, both verbal and written.
* Ability to:
* Perform job functions with attention to detail, speed, and accuracy.
* Use good judgment in making decisions under pressure.
* Work cohesively with co-workers as part of a team.
* Work with minimal supervision.
* Maintain confidentiality of guest information and pertinent company data.
* Direct performance of staff and follow up with corrections when needed.
